An Easy & Healthy Burrito Dinner!

Even before taco Tuesday became a thing I felt the irresistible desire to eat Mexican food on Tuesday’s, actually, every day.

I LOVE Mexican food. 

Tacos, burritos, tortas, enchiladas…. hand them over because I’ll probably devour them all in 3.5741 seconds.
The only probably is staying healthy while diving into the endless, beans rice and cheese that Mexican food offers.
That’s why burrito bowls are definitely my go to Mexican dish. They’re super easy to make and you are in charge of the ingredients! So whether you want to add tofu, chicken or prefer to fill it with veggies like me, it’s totally up to you!
Another reason why I love making my own burrito bowls is because I know where the ingredients came from, or at least the quality of the ingredients.
Here’s how I prepare my burrito bowls but honestly feel free to switch it up and add some of your favorites into the mix!
1/4 cup of organic corn
1/4 cup of organic beans
1/2 cup of cooked rice
1/2 cup of cooked quinoa
1/2 cup of lettuce
1/2 of an avocado
Desired amount of salsa
Chipotle sauce if wanted! [I make some amazing homemade super healthy chipotle sauce, comment if you’d like the recipe!]
1. Once rice and quinoa is cooked combine All the ingredients in a medium to large bowl, mix together and dig in!!!
